Thai Shrimp and Fresh Vegetable Rice

Shrimp marinated in a mixture of lime juice, soy sauce, jalapeno pepper, ginger, and garlic, and then stir-fried, are used as a superb topping for this tasty stir-fried vegetable rice. Since this recipe calls for the use of hot peppers (jalapeno), it is beneficial to understand the proper way to handle them so that the volatile oils in the peppers will not cause irritation to the skin and eyes.

ingredients

3/4 pound fresh or frozen peeled and deveined medium shrimp
2 tablespoons lime juice
4 teaspoons soy sauce
1 fresh jalapeno pepper, seeded and finely chopped*
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 tablespoon cooking oil
1 pound asparagus spears, bias-sliced into 1-inch pieces
1 small red sweet pepper, cut into thin bite-size strips
3 cups hot cooked rice
1/4 cup chopped peanuts

成分

3 / 4 pound新鲜或冷冻去皮,deveined中虾

directions

Thaw shrimp, if frozen. Rinse shrimp; pat dry. Place shrimp in medium bowl. For marinade, combine lime juice, soy sauce, jalapeno pepper, ginger, and garlic. Pour over shrimp; toss to coat. Marinate at room temperature for 15 minutes, stirring occasionally. Drain shrimp well, reserving marinade.
如果是冻虾,解冻。虾洗净,拍干。虾放入中碗。对于腌,结合lime juice(酸橙汁,我觉得柠檬汁也可以吧~),酱油,辣椒尖辣椒,生姜,大蒜。腌15分钟,在室温温度,偶尔搅拌下。虾排水井,保留腌料。
Heat oil in a wok or large skillet over medium-high heat. (Add more oil if necessary during cooking.) Stir-fry shrimp in hot oil for 2 to 3 minutes or until shrimp turn pink. Remove from wok; cover and keep warm. Add asparagus and pepper strips to wok; stir-fry for 2 to 3 minutes or until crisp-tender. Add reserved marinade to wok and bring just to boiling. Stir in cooked rice and peanuts.
To serve, transfer rice mixture to individual bowls or dinner plates. Spoon shrimp on top. Makes 4 servings.
烧热油镬中一或以上的中高热量大煎锅。 (添加更多的油,如果在烹调必要的。)热油2至3分钟,或直至炒虾变成粉红色。从锅里取出;盖保暖。加入芦笋,辣椒; 2至3分钟,或把材料炒嫩。保留原腌制汁直到沸腾。在搅拌米饭和花生。

*Note: Because chili peppers, such as jalapenos, contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chili peppers, put plastic bags over your hands or wear plastic or rubber gloves. If your bare hands do touch the chili peppers, wash your hands well with soap and warm water.
Make-Ahead Tip: Prepare shrimp as above. Cover and marinate in refrigerator for up to 2 hours, stirring occasionally. Drain well, reserving marinade. Cook and serve as above.
*注:由于辣椒,如胡椒,含有挥发油,会辣到你的皮肤和眼睛,尽可能避免与他们直接接触。当处理辣椒的时候,你可以手套胶袋或穿塑料或橡胶手套。如果你用手触摸做的辣椒,用肥皂和温水洗手最好。
请预提示:准备上虾。存在冰箱里腌制2小时,不时搅拌,保留腌泡汁
