位於台中市七期重劃區住宅巷弄裡，「醇燒」的定和靜，用以對比於周遭屋舍的尋常。設計者程紹正韜，就這麼讓他的餐飲新作，以一種尋味自在氣度，隱身安住。 光，通透流轉於空間肌理上，也在材質與美學的極致落定中，交織出室內室外、玄關中介的和諧如煦。從建築外觀意象開始，設計者讓光與肌理融化後的建築美學，為用餐者或過往身影開啟了一扇環境心理的門扉，在匆匆的一瞥、在緩致的用餐間，閒淡定靜的，不僅是空間，也是人間。
程紹正韜最擅長以粗獷原質的自然，對比出凝聚極致的風雅。一樓日式居酒屋的巨石與厚圓木裡，融入了時尚用餐特區的風格沙發與精緻編織，二者之間，已不僅僅著墨於空間的視覺美學，正仿若飲膳之際；絕妙的，乃是包容的味覺、視覺與心思。
二樓因應空間使用彈性，規劃為三間包廂，以適應中台灣餐飲管理人流的變化與不可預期的特性。其間風格的串連、肌理與構成的延續、視覺與心理和諧統一的設計面向，也盡顯於旋轉式推滑門的開闔啟閉之中。
頂層是一個十八人次坐席的獨立VIP、特別廚房、專屬空間廊道與化妝間外，中央採光天井的日間自然光量，轉而至日暮後的七期夜景，設計者賦予此區的，是絕然的層峰定位。

Located in the narrow alley of recently developed zone, Mellow Wine sends out a message of tranquil silence in contrast to the gaudy display of expensive apartments and houses. This is how ChenShao’s recent work reveals his self desired comfort against the uneasy disturbance of cacophony.
Light is an element of beauty; light gives life to a building and weaves the true texture to mediate humanity and material. This simple permeating element is not just a life substance for survival it is an element that defines the human psyche.
Chenshao who has since withdrawn himself to the most remote places has been mostly interested in redefining what is rustic; Mellow Wine’s first floor is like being submerged into big rocks and savage wood logs while the fine leather upholster awakes a sense of contrast. This sensible awareness of human perception gives the restaurant a total range of taste.
The second floor is designated to how ever it needs to be used. There are three private rooms yet they can be linked to accept the largest accommodation.
The top floor is an 18 seats individual VIP room with equipment of independent kitchen and lavatory. Light comes down from a sky light and features a dramatic view towards the rising skyline of the city.
